Sauvignon Blanc, 2020-Bouchard Finlayson


How much do you know about Sauvignon Blancs from South Africa?


Tasting Notes: Incredibly refreshing flavours marking its territory with green apples, loads of zesty citrus fruits with hints of tart and sweet notes of a maracuja. In the nose, I sensed more the vegetal side of the grape, asparagus, perhaps? Great acidity, just perfect to support all the flavours in the wine. A refreshing white wine that craves summer.


Food pairing: Girolles mushrooms sautéed with shallot, bacon, apricot in butter, topped on pan fried cod filet. The sweetness of the apricot in the buttery sauce contributed to a harmonious pairing in the palate.


Viticulture: Difficult vintage, heavy rains was a great challenge upon véraison. As the soil consists of clay, water management was a priority; clay retains lots of nutrients, absorbs water and does not drain quickly enough, but the season was a blessing, hot and dry days before harvest saved the 25 years old vines. The grapes are protected from the sun by the leaves, the shoots are positioned vertically on a cane, giving them shade for safe ripening and development of sugars without compromising the acidity in the grape, but enough air circulation to avoid development of fungus, after long rain; open canopy. Hand harvest during cooling morning hours.


Winemaking: Upon reception, grapes are crushed, destemmed and lightly pressed. After fermentation, the wine undergoes maturation on lees, to stabilise the wine, for additional texture and to enhance the characteristics of Sauvignon Blanc. There is no sedimentation in the bottle. The wine is vegan, there are no animal proteins (eggs, milk-derived protein).


Peter Finlayson “Winemaking Legend 2020” founded Bouchard Finlayson in 1989 in partnership with acclaimed Burgundian winemaker Paul Bouchard, hence the estate’s name “Bouchard Finlayson”. Peter pioneered Pinot Noir in South Africa and he introduced Italian varietals Sangiovese and Nebbiolo to the country. He is indeed a legend!

Analysis Viticulture

  • Fungus was a threat in 2019, systemic fungicides can be applied, this penetrates the green tissue of the vine.

  • Guyot pruning, cane training.

Analysis winemaking

  • The result of no sedimentation is racking multiple times and filtered. I don’t believe the wine was clarified, but if it was, only vegetable, potato, legume agents.

  • The grapes can be pressed, because they were hand-harvested, extra labour, must have the equipment.
