Wine: Petit Chablis
Origin: Chablis, Burgundy, France.
Winemaker: Domaine Denis-Pommier
Viticulture tech: Organic, biodynamic.
Winemaking: Fermentation on native yeast, MLF in stainless steel, on fine lees for 6 months. Fining.
Ageing potential after release: until 2022.
Nose: Secondary aromas of brioche, creamy notes, med. intensity, developing.
Palate: Dry with med + acidity, low alcohol, this wine reveals predominantly notes of grapefruit, green apple and lemon with a hint of coconut intermixed with brioche and a flinty minerality on the finish.
As the weather gets hotter, a more refreshing white wine is added on my wish list. I have paired this wine with Spaghetti alle Vongole.
Pairing with an Italian wine would be desired by many traditional Italian consumers, but I am pairing now with the wines and ingredients I have available with me. Perfect pairing is a perfect meal in a perfect ambiance. Wish you all a happy long week-end and enjoy the Bank holiday.
